1/2 chopped onion
1 tbsp. butter
salt and pepper to taste
1/4 cup plain flour
2 cups heavy cream
2 cups chicken broth
2 cups milk
2 shredded carrots
1 large bag frozen broccoli or 2 large bunches of fresh broccoli chopped
8 ounces of sharp cheese shredded
1/4 tsp nutmeg

Directions:
Directions:
Cook carrots and broccoli in broth until very tender (about 1 hour) at a steady boil (covered)
Saute onion in butter until translucent
Make a roux with the remaining butter and flour, cook an additional 5 minutes stirring constantly.
Add heavy cream and milk stirring constantly or whisk until smooth until thickened and remove from heat.
Add cream and milk to broccoli and salt and pepper to taste.
Add cheese and nutmeg, stirring until combined and melted.

(You can also pulse broccoli to make a smoother soup if desired)
