3-4 Chicken breasts, cooked and diced
1 C wild rice, prepared
½ C chopped onion
½ C butter or oil
¼ C flour
6 oz sliced mushrooms
1 ½ C chicken broth
1 ½ C half & half
¼ C diced pimento
2 T chopped parsley
1 ½ t salt
¼ t pepper
½ C slivered almonds

Directions:

Prepare wild rice. Sauté onions and mushrooms in butter or oil. Remove from heat. Stir in flour. Add the chicken broth to the flour mixture. Add cream. Cook and stir until thickened. It won’t be terribly thick. Add rice, chicken, pimento, parsley, salt and pepper. Place in 2-quart casserole and sprinkle with almonds. Bake 350° for 25-30 minutes.
