1 10 oz. pkg. frozen chopped spinach
2 13 3/4 can artichoke hearts
1/2 cup mayonnaise
1/2 cup sour cream
1 cup freshly grated parmesan
1 cup grated pepper, jack cheese
(swiss cheese is good too, in place of Jack cheese)

Directions:
Directions:
Preheat oven to 350º. Heat the spinach in a microwave on high for 5 minutes and squeeze dry. Drain the artichoke and coarsly chop in food processor. Combine all ingredients except the Jack cheesein a large bowl. Stir well. Scrape into the prepared casserole dish and sprinkle with Jack cheese. Bake for 30 minutes. Transfer to chafing dish and keep warm. Serve with bagel chips. I half this recipe and freeze for later.
