1 medium onion, chopped
2 carrots, chopped
2 stalks celery, chopped
2 tsp. minced garlic
4 oz. pancetta, chopped
14 oz. can diced tomato
1 lb. Swiss Chard - destemmed and rough chopped
1 large russet - cubed
1 qt. beef stock
1 6" sprig Rosemary
1 can Cannellini Beans
2 tbsp. chopped Parsley

Directions:
Directions:
Sauté onion, carrots, celery, pancetta, and garlic for 10 minutes over medium heat. Add chard and potato and sauté until chard wilts (2 minutes). Add tomatoes and sauté 10 minutes then add Rosemary and stock. Cover and simmer 40-45 minutes. Then add beans and parsley and simmer 10 more minutes.
