2 1/2 C Red Quinoa
4 Eggs
1/2 - 1 C Breadcrumbs (Judge. Usually closer to 1 C)
1/4 C Basil, Chopped
1/4 C Parsley, Chopped
1 Yellow or White Onion, Chopped
1/2 tsp or 3 Cloves Garlic, Minced
1/3 C Grated Parmesan or Pecorino Romano
1/2 tsp Salt
Pepper
1/4 C Milk
3 T Extra Virgin Olive Oil
Corn
Feta
Red Bell Pepper, Chopped
Arugula, Chopped - Optional
Splash of Red Wine Vinegar or Fresh Lemon Juice

Cook quinoa according to cooking instructions.

Sautee onion in olive oil over medium heat until translucent, adding garlic halfway through.

Beat eggs & combine with milk.

In a large bowl combine quinoa, cooked onions and garlic, cheese, peppers, breadcrumbds, basil, parsley, corn, (arugula), and red wine vinegar.

Pour in egg/milk mixture. stir well. The mixture should form a patty. If not, add a splash more milk to moisten the mix. If your mix is too wet to form a patty, add more breadcrumbds.

Form patties. Add to 1-2 T oil over medium heat for immediate cooking. 7-8 min per side.
To store, individually wrap formed patties in parchment paper followed by aluminum foil.
