3 medium cucumbers, peeled and sliced thin
Kosher salt
1/2 c. unseasoned rice wine vinegar
1/2 c. water
3 tbsp. sugar
1 tbsp. minced onion
1/4 tsp. red pepper flakes

Directions:
Directions:
Place cucumbers in a colander sitting over a bowl. Sprinkle with salt and toss well. Let sit refrigerated for 1 hour. Toss a few times to help drain.

Combine vinegar, water, sugar, and red pepper in a small saucepan. Bring to a boil and reduce heat to a simmer. Cook until reduced to 1/3 c. (about 10 minutes). Remove from heat and add onion.

When cucumbers are done pat them dry with a few paper towels and combine with vinegar reduction.

Chill for several hours before serving.
