Ingredients: ⦁ 2 cups all-purpose flour ⦁ 3 Tbsp granulated sugar ⦁ 1 ½ tsp baking soda ⦁ 1 ½ tsp baking powder ⦁ ½ tsp salt ⦁ 2 large eggs, beaten ⦁ 1 cup buttermilk ⦁ ½ cup sour cream ⦁ ½ stick (4 Tbsp) melted, slightly cooled butter ⦁ 1 tsp vanilla ⦁ Chocolate chips or blueberries to stir in

Directions:Whisk the dry ingredients together in a large bowl. In a separate bowl whisk together the wet ingredients. Pour the wet ingredients on the dry ingredients and stir just until combined. Gently fold in the chocolate chips or blueberries. This is a real thick batter, like cake batter, as opposed to traditional runnier pancake recipes. I like to put a little coconut oil on my griddle to get a nice flavor and crispness but you can just lightly butter it if you’d like. Dump about ¼ cup batter at a time and gently spread out the batter just a bit. Flip after a couple minutes, when the bottom is firm and golden. These really don’t need any syrup or anything on them but since it is the weekend feel free to top them with Nutella or blueberry compote and some whipped cream! |
