3 1/2 c. diced potatoes
3 stalks celery(diced)
1 c. carrots (diced)
1 onion chopped
2 1/2 c. water
5 slices bacon (cooked & diced)
1/2 tsp. thyme
4 T. Butter
3 T. flour
1tsp. salt
1/2 tsp. pepper
1 1/2 c. milk
2 chicken bouillon cubes (optional)

Directions:
Directions:
Cook on high heat potatoes, carrots & celery in 2 1/2 c. water, covered until tender.
Saute' on med heat, the onion in the butter until soft. Stir in the flour, salt & pepper. Gradually add the milk stirring constantly until thickened. (like a rue) Add to the vegetables, lower heat to simmer and stir a while to be sure all ingredients are mixed and rue is mixed in well. May add 2
chicken bouillon cubes, if desired.
Serve when done with hard rolls.
