1 tbsp. olive oil
1 medium onion chopped (of your choice)
1/4 C chopped pickled jalapeno or 2-3 chopped fresh jalapeno
1/2 block of Velveeta, cut into 1/2-inch cubes
1 can petite diced tomatoes
1/2 C chopped fresh cilantro

Directions:

Add 1 tbsp. olive oil into pan heat on medium heat
Add Onion and jalapeno into pan (should sizzle when you add if not the oil isn't hot enough), stir often cook until the onions are slightly brown
Add undrained tomatoes cook until slow bubbles start
Add Velveeta in medium saucepan (do not stir)
Leave Velveeta on top of tomatoes until mostly melted then stir
Cook over medium heat 5 minutes or until Velveeta is melted completely and mixture is blended, stirring frequently or cheese will burn.
Add cilantro and stir.
