8 medium sized Idaho baking potatoes
24 oz. of sour cream
1 medium sized onion chopped
1 1/2 - 2 sticks of butter
1 Cup parmesan cheese
1 tsp. Salt
1 tsp. Pepper

Directions:
Directions:
Bake potatoes at 400º till done 25 to 30 minutes.
Scoop out center of potatoes leaving skins intact place in bowl.
Rice potates with potato masher and add 1 1/2 sticks of butter. When butter is melted add onion salt and pepper and parmesan cheese hand stir.
Use hand mixer and add 16 oz of sour cream to potato mixture.
Use piping bag or spoon to place potato mixture back into patato skins.
Place potatoes back in oven at 350º and cook for 15 to 20 minutes or until tops are brown.
