3 T olive oil
1 pound andouille sausage, cut into 1/2 inch slices
1 onion, finely chopped
1 green bell pepper, finely chopped
2 ribs celery, finely chopped
2 garlic cloves, minced
2 [15-1/2 ounce] cans small white beans, drained
1 [14-1/2 ounce] can stewed tomatoes
1/2 cup chicken broth
2 tsp cajun seasoning

Directions:

Heat 1 T oil in a large skillet over medium-high heat. Add the sausage and cook until browned, about 5 minutes. Transfer to a plate. Add the onion, bell pepper, celery and garlic to the skillet. Reduce the heat to medium and cook, stirring occasionally until the vegetables are very tender, about 8 minutes.
Return the sausage to the skillet. Add the beans, tomatoes, broth and seasoning; bring to a boil. Reduce the heat and simmer until the flavors are blended, about 10 minutes. Drizzle with the remaining 2 T olive oil right before serving.
