6 chicken grilled chicken breast with salt and pepper
2 red bell peppers-chopped
2 onions-chopped
1 Poblano pepper-chopped
1 can chicken broth
1 24 oz. plain greek yogurt
2 cans artichoke hearts
2 c fresh spinach
1 c sliced mushrooms
1 tsp salt
2 tsp pepper
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp cumin
dash cayenne

Directions:
Directions:
saute vegetables in 1 tbsp of olive oil
remove from pan
stir in Greek yogurt and chicken broth
add all seasonings
stir until combined (10 minutes)
add vegetables and cook together until liquid is reduced
serve hot
