1 Tbsp. Butter
3 Carrots, thinly slices
3 cloves of Garlic, minced
1 Onion, chopped
1/2 tsp. dried Thyme
1/2 tsp. dried Basil
Salt & Pepper
1 lb. boneless chicken or turkey cut into 1" cubes
1 cup Quinoa
2 Tbsp. Flour
2 cups Chicken Broth
2 cups Milk, heated
1 cup frozen Peas, thawed
1 cup Tomatoes, diced and drained
1/4 cup Parmesan Cheese

Directions:
Directions:
In large pot melt butter over medium heat. Saute carrots, onion, garlic, thyme, basil, salt and pepper for about 5 minutes or until softened. Add chicken and cook stirring for 3 minutes until white all over. Stir in Quinoa.

Whisk flour into broth and stir into pot, bringing to simmer, stirring often for about 20 minutes until quinoa is almost tender. Reduce heat to low. Stir in peas and tomatoes simmer uncovered until chicken is completely cooked and quinoa is tender. Stir in half of the parmesan cheese. Serve topping with the remaining cheese.
