2 cups onion, chopped
1.5 cus celery, chopped
1 bell pepper, chopped
1/2-1 Tbsp. minced garlic
2 cans petite diced tomatoes (Creole flavored, if you can find it!)
1 bag frozen (unbreaded) okra
1/2 cup oil
1 1/4 cup flour
2 jugs chicken broth (48 oz. each)
1 lb. link sausage (or Andouille)- (I like Conecuh or Polk's, & usually do a mixture of the sausage and Andouile)
1/2- 1 whole rotisserie chicken

Directions:
Begine by frying your sausage in a large iron skillet. Once the sausage is cooked, remove from heat and add oil (keep fat from sausage in skilet). Once oil is very hot, add flour and begin to whisk. You will want to continue to whisk until flour turns dark brown (you will think you are about to burn it!) Once flour is dark brown, add all chopped vegetables (NOT tomatoes and NOT okra) and continue to stir until veggies are tender. Remive from skillet and transfer mixture to a large pot (that is hot). Add the chicken broth and stir together well. I like to add creole seasoning like Tony's, garlic peper, cayenne pepper, a bay leaf and Tabasco at this point for added flavoring. Add canned tomatoes and let cook on medium heat for an hour or so, stirring occasionally. About thirty minutes before you are ready to serve, add your okra and meat and atart the rice!
