½ C bread crumbs
1 lb chicken breasts halved & skinned
3 T oil
¾ C orange juice
2 T honey
2 t Dijon mustard
1 t cornstarch
½ t tarragon
1 med onion thinly sliced & separated into rings
Salt & pepper
Parsley






Directions:
Directions:



Coat chicken with crumbs, heat oil & brown chicken on both sides. Combine remaining ingredients, except onion, blend well, pour over chicken, add onion. Bring to boil, reduce heat, simmer 25min or until chicken is tender & cooked. Serve with rice or pasta.
