16 - 20 dried chiles of your choice
1 teaspoon caraway seeds
1 teaspoon coriander seeds
1 teaspoon cumin seeds
1½ teaspoon kosher salt
2 teaspoon garlic powder

Directions:
Directions:
Toast spices until fragrant, stirring to keep from burning; about 2 minutes.

Transfer to a food processor, add chiles and process until the chiles are in small pieces. For a finer blend, transfer to a coffee grinder and grind until smooth. This will have to be done in batches.

Combine well and store in an airtight container.
