Sponge:
2 1/4 ounces bread flour
2 teaspoons instant dry yeast
4 oz lukewarm whole milk


Dough:
5 large eggs, slightly beaten
13 3/4 ounces bread flour
2 tablespoons sugar
1 1/4 teaspoon salt
1 1/2 cup butter, softened

Directions:
Directions:
Mix and proof sponge for about 30 minutes. Sponge should fall when bowl is tapped.
Mix dry ingredients in a separate bowl; add to the sponge.
Add eggs until ingredients are hydrated. Let rest for 5 minutes.
Add butter a quarter at a time. Make sure butter is well assimilated.
Refrigerate overnight covered on a lightly greased bowl. Bake at 375 degrees.
