5-6 White potatoes or 2.5 Lbs of baby red potatoes
1/2 Lb Bacon -raw and diced
1 Large Onion-Diced
2 Cups of Diced Celery
4 Cups of Milk
3 Cups of Water
1 Cup of Chicken Broth.
1 tsp Salt
1 tsp Black Pepper
3/4 C Margarine
3/4 C Flour
1/4 C Parsley
1 C of Heavy Cream

**Toppings**
2 Cups of shredded sharp cheddar
1 Cup of Diced Green Onions
2 Cups of Cooked Bacon

Directions:
Directions:
Peel and boil potatoes for 10 Minutes. Drain and set aside.

In a large pot Saute 1/2 lb of Bacon, Onions and Celery until celery is soft and bacon is cooked. Drain Grease.
Add in Milk,water, chicken broth,basil, salt, pepper. Simmer on med heat- do not boil.

In a large sauce pan melt butter and and flour simmer and whisk 1 minute. While bubbling, add to pot with celery mixture. Stir until thick and creamy. Stir in parsley, potatoes and cream. Let simmer 1-2 hours.

*Garnish with Green onion, additional bacon pieces, sour cream and cheddar cheese.
