1 med. Onion, chopped
1/4 c. Green bell pepper, finely chopped
2 tbsp. Butter or margarine
Water
16 oz. Stewed tomatoes, canned, drained and chopped, reserve liquid
1 c. Rice, long grain
1 1/2 tsp. Salt
1/8 tsp. Pepper

In 2-quart casserole, combine onion, green pepper and butter. Microwave on HIGH, 4 - 5 minutes, stirring once. Add enough water to reserved tomato liquid to equal 2 cups. Add to tomatoes, rice, salt and pepper. Cook, covered with glass lid, on HIGH 8 - 9 minutes then on MEDIUM 15 - 17 minutes until rice is tender, stirring once. Let stand, covered, 5 minutes before serving.
