Unsweetened cocoa powder
2½ cups flour
⅓ cup unsweetened cocoa powder
1 tsp. baking soda
¾ tsp. salt
1¾ cup sugar
3 large eggs
1½ cups mashed bananas (~3 large)
1 cup mini chocolate chips
½ cup canola oil

Directions:

Preheat oven to 325º. Generously grease and dust with cocoa powder a loaf pan.
In a medium bowl, stir together flour, cocoa powder, baking soda and salt. Set aside.
In a large mixer bowl at medium speed, beat sugar, oil and eggs until well blended. At low speed, beat in flour mixture, just until blended. Stir in chocolate chips. Fill loaf pan and bake 45min. - 1 hour until a toothpick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes then remove.
