1 lb skirt steak
salt and pepper.
1 lb 3 cheese tortellini.
1 Tbsp butter.
1 shallot, minced.
1 1/2 cup heavy cream.
1/2 cup Gorgonzola cheese

Directions:
Directions:
Season steak liberally with salt and pepper. Cook for 6 minutes each side for medium rare.
Remove from heat and cover with foil. Let rest 5-10 minutes.
While steak is cooking, boil pasta until desired doneness (5-10 minutes).
Sauce recipe: Melt butter in saucepan, add shallots, cook until tender. Add heavy cream, cook on medium low heat until reduced by half. Turn heat to low, add the Gorgonzola and stir until it melts. Season to taste with salt and pepper.
Drain pasta, mix with half the cheese sauce, place in serving dish. Cut steak into 1/4 inch thickness and place on top of pasta. Pour remaining sauce over steak. Serve immediately. Enjoy!
