3 cups unsifted all-purpose flour
1 1/2 cups white sugar
2/3 cups unsweetened cocoa
1 1/4 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 cups mayonnaise
1 1/2 cups water
1 1/2 tsp. vanilla

Grease 2 layer pans or one 9" X 2" X 13" rectangular baking pan; line bottoms with waxed or parchment paper. Sift together dry ingredients into a large bowl. Stir in mayonnaise. Gradually stir in water and vanilla until smooth and blended.

Pour into prepared pans. Bade in 350ºF oven for about 30 minutes or until cake tests 'done'. Cool completely. When cooled, frost with your favourite chocolate frosting. I cut this cake into portions right in the pan. It is easy to transport and serve.
