1 lb. chorizo
2 large potatoes, cooked, peeled, and diced
2 cups fresh spinach
1 onion, chopped
2 cloves garlic
2 tomatoes, diced
3 oz. cream cheese, cubed
4 flour tortillas

Directions:
In a skillet brown chorizo. Drain fat, leaving enough to cook the vegetables. Add onion and garlic and cook until onion is translucent. Add tomatoes and cook until soft. Wash spinach, tear into bite size pieces, and put in skillet. Cook just until spinach is soift. Add cubed cream cheese. It will melt when frying the chimichangas.

Soften tortilla on electric burner on med. high for a few seconds on each side. Put 2 tablespoons sausage & potatoes mixture in the middle of the tortilla. Fold like an envelope and fold so the tortilla is closed completely. In a deep frying pan, heat four inches of oil very hot. Put chimichanga in oil, seem side down and fry until golden brown on both sides.

Chimichangas are a method of cooking. You can put any filling you want in the tortillas. Picadilla, chile con carne, or chicken are just a few that are great in chimichangas.
