3 cups heavy cream
3/4 teaspoon vanilla
1/4 teaspoon salt
6 egg yolks
3 ounces sugar

Directions:
Directions:
Preheat oven to 350 degrees.
Butter and sugar ramekins and set aside.
Heat heavy cream to just under a boil. Remove from heat
Mix together yolks and sugar until well combined.
Gradually stir in the hot cream.
Add vanilla and salt.
Strain mixture.
Place 6 ramekins in a deep pan.
Divide custard equally.
Plan in oven and fill pan with warm water half way up the sides of the ramekins.
Bake for 25 minutes or until toothpick comes out clean.
Remove, cool, and then refrigerate.

Optional: Sprinkle sugar or brown sugar on the top of each ramekin. Brown the top under broiler or with torch.
