1 cup quick cooking rolled oats (not instant)
½ cup all-purpose flour
½ cup whole wheat flour
½ cup white sugar
¼ cup ground flax seed
1 ½ tsp baking powder
1 tsp baking soda
½ tsp salt
1 ½ cup ripe mashed ripe bananas (3 large or 4 small)
½ cup melted butter
1 egg
1 cup fresh or frozen blueberries

Preheat oven to 375ºF. Combine all dry ingredients. Mix well and set aside. In a second bowl, whisk together bananas, butter and egg. Add banana mixture to dry ingredients and stir until dry ingredients are moistened. Do not over stir. Gently fold in blueberries or you will end up with a blue mess. Fill 12 muffin tins. Bake for 20 minutes.
