4 eggs, separated

1 1/4 cups white sugar

3 cups flour, sifted twice

1 cup vegetable oil (not olive oil)

1 tsp. each soda, baking powder and salt

1/2 cup poppy seeds

1 1/2 cups whipping cream

zest of 2 lemons, juice of 1 lemon

Beat egg yolks until light and fluffy - add sugar 1 tbsp. at a time until totally incorporated.

Sift flour with soda, baking powder and salt. Slowly add oil and whipping cream to the egg/sugar mixture. Incorporate flour and poppy seeds and lemon zest alternately with the juice from 1 lemon. Beat for 10 minutes. Beat the egg whites to a soft peak.

Oil a large bundt pan and sprinkle with dry bread crumbs. At last minute, incorporate the whipped egg whites to 'lighten up' the batter. Bake for 1 hour at 350º F. Check if done before removing from oven.

Cool completely on rack. A loose 'icing' may be made from icing sugar and the juice in the remaining lemon. Drizzle over the top before serving.

This recipe is well over 100 years old. It was brought to Canada by a Polish immigrant after WWII who said it was given to her by her Grandmother and has been a family favourite ever since.
