Basic Filling:
1 cup grated Monterey Jack cheese
1/4 cup Anaheim chiles or jalapenos, seeded and cut in strips

Cheese & Apple Filling:
1/4 - 1/2 lb. Brie cheese, sliced
1/4 cup green chiles cut into strips

Cheese, Bacon, & Tomato Filling:
1/4 - 1/2 lb. Imported Swiss cheese, sliced
1/2 cup bacon, cooked crisp and crumbled
1/4 cup tomatoes, chopped

Cheese, Mushroom & Onions:
1/4 - 1/2 lb Edam cheese, sliced
1/2 cup mushrooms, chopped
1/4 cup onions, diced

Ham & Swiss Cheese:
1/4 - 1/2 lb Swiss cheese, slices
1/2 cup ham, chopped or thin slices

Cream Cheese & Jalapeno Jelly (good for breakfast):
3 oz. cream cheese, softened
2 tbsp. jalapeno jelly

Avocado Filling:
1 - 2 avocados, thinly sliced
1/4 lb,. Monterey Jack cheese, sliced
1/4 cup green chiles, chopped
1/2 cup tomato, thinly sliced

Fancy Filling:
1 oz. Morel mushrooms, soaked and chopped finely6
3/4 cup Gouda cheese, grated
2-3 cloves garlic, minced
1 tsp. green onion, chopped

Directions:
Directions:
Warm flour tortillas on burner. Spread half of tortilla with filling. Fold in half and brush both sides with olive oil. Line up in rows on a cookie sheet. Cover with damp towel until you are ready to fry them.
Heat a non-stick frying pan on medium heat. Add 1 tbsp. olive oil. When oil is hot, place quesadilla in pan and fry until both sides are golden brown. Remove from pan and pat with a paper towel to absorb excess oil.

Serve immediately with your favorite salsa.

Quesadillas are Mexican sandwiches. You can use either corn or flour tortillas. There are an endless variety of fillings. These are some of my favorites. Use your imagination, I've even made peanut butter and jelly quesadillas for my grandchildren.
