5½-6 C. All-purpose flour- divided
2 tbsp. Active Dry Yeast
1 tbsp. Sugar
2 tsp. Salt
1/4 tsp. Baking Soda
2 C. Whole Milk
1/2 C. warm Water
Cornmeal

Directions:
Directions:
Preheat oven to 400º.

Combine 3 cups flour, yeast, sugar, salt and baking soda into a large mixing bowl. Heat milk and water until very warm (120º-130º).

Pour liquids into dry mixture and beat well (a stand mixer with a dough hook is best for this part). Mix in enough of the remaining flour to make a stiff dough.

Spray two 8½" x 4½" bread pans with cooking spray and sprinkle them with cornmeal. Spoon the dough into the pan with half of the mixture then level. Spray one side of some wax paper and cover loaves, then let rise in a warm place (on top of your preheating oven works great) for 45 minutes.

Bake for 25 minutes or until loaves are nicely browned on top. Immediately remove loaves from pans and cool on a wire rack.

King Arthur Unbleached All-Purpose Flour works best with this recipe, if you can find it.

This is a heavy bread that works great for toast, garlic bread, grilled sandwiches, especially grilled cheese, and as a side to soups or stews, or just by itself. Should be eaten (or frozen) within a couple days of baking.
