Wet: 1 egg
1 cup milk
2 tbsp. oil
2 tbsp. sugar
Dry: 1 cup flour
2 tbsp. baking powder
1/2 tsp. salt

Directions:
Beat the wet ingredients together in a mixing bowl.
Add all the dry ingredients, then stir just until mixed, batter should be lumpy.
Pour by the 1/4 cup full onto greased, pre-warmed skillet.
Flip when bubbles appear and top starts looking dry.
Optional: You can sprinkle chocolate chips or blueberries onto pancakes before flipping.

This recipe is very versatile and works well with many types of oils, sugars, milks or flours. We've used coconut oil, olive oil, vegetable oils and butter at different times. We've personally substituted with coconut sugar. Works well with soy, almond, rice, and cow's milk. We've also made this recipe gluten-free by using gluten-free flour and oat flour.

I remember my mom, Stephanie Blood, making these for me as a child, and teaching me to make them when I was young. Now I make them for my four kids, and my oldest two can make them on their own.
This recipe was originally from a vintage Better Homes & Gardens cookbook, which we always had on our shelf.
