4 Chicken breasts
Refrigerated pesto
Shredded Mozzarella cheese
Spaghetti squash

Directions:
Directions:
Heat the oven to 350 degrees. Place chicken breasts in a glass baking dish. Pour the pesto over the breasts and cover the dish with aluminum foil. Bake for 40 minutes. Add the Mozzarella cheese to the top of the chicken the last 5 minutes of the bake.

With a knife, make several pokes into the spaghetti squash to prevent the squash from bursting during the cooking process. Cook in the Microwave for a total of 16 to 18 minutes, stopping the microwave to rotate the squash a few times. Cut the squash in half and remove the center containing the seeds. Scoop out the squash.

Place a serving of the squash on a plate with the chicken pesto directly on top.

So easy but so tasty!!!

We make this dish at least once a week and have served at dinner parties. Guests believe we spent hours preparing...our secret! You can take the time to make the pesto from scratch but the refrigerated pesto at COSTCO is to die for!!!
