1 c. long grain rice
1 - 10 oz. can mushrooms (sliced)
1/2 c. salad oil
1/4 c. cider vinegar
2 tbsp. soy sauce
1/2 tsp. salt
1 can mandarin oranges (drained)
1 c. thinly sliced celery
2 tbsp. thinly sliced green onions
1/2 c. slivered almonds

Directions:
Directions:
Cook rice and spoon into a bowl. Combine oil, vinegar, soy sauce and salt in jar or something with a lid (tupperware) and shake well. Add mushrooms to rice and pour the oil mixture over the rice. Toss rice and mushrooms lightly to mix. Cover and chill. Just before serving fold in mandarin oranges, celery, onions and almonds.
