1/2 c butter (one stick)
2 c. packed brown sugar
2 eggs
1 tsp. vanilla
2 c. flour
1/8 tsp. salt
2 tsp. baking powder
1 c. shredded coconut
1 c. chopped nuts

Directions:
Directions:
Cook butter and brown sugar over low heat until bubbly in a large sauce pan. Cool and add eggs one at a time. Beat well. Add vanilla, then sifted dry ingredients, coconut and nuts. Mix thoroughly. Spread in (sprayed) shallow pan, 10 1/2 x 15 inches. Bake at 350º cut while warm.

I first started making this when we were first married and did not have mixer. These bars mix very well by hand.
For some reason you do not even taste the coconut and do not realize it has coconut! It just adds to the chewiness!
