1 pound boneless, skinless chicken breasts (cut into 1-inch cubes)
salt and pepper, to taste
2 large eggs
1 cup Panko

For the sauce:
1/4 cup reduced-sodium soy sauce
1/4 cup honey
4 cloves garlic, minced
1-2 Tbsp. hoisin sauce
1 Tbsp. freshly grated ginger
1 Tbsp. Sriracha
2 green onions, thinly sliced
2 tsp. sesame seeds (optional)

Directions:
Directions:
1. Preheat oven to 400 degrees. Lightly oil 9- x 13-inch baking dish (I used cookie sheet) or coat with non-stick spray.
2. Season chicken with salt and pepper. Working in batches, dip chicken in egg batter then Panko.
3. Add chicken to baking dish/sheet and place in oven until golden brown, about 15-20 minutes.
4. In a medium saucepan over medium-high heat, combine soy sauce, honey, garlic, hoisin sauce, ginger and Sriracha until slightly thickened (about 2-3 minutes). Stir chicken in and gently toss to combine.
5. Garnish with scallions and serve immediately.
