Ingredients:  
3 large boneless, skinless chicken breasts cut in small pieces
1 large onion chopped
2 boxes of chicken broth
1 to 2 cups water. 2 c water makes a more brothy soup.
3 large potatoes peeled and cut into small pieces
1 large carrot, peeled and cut into small pieces
1/2 cup frozen peas
1/2 cup frozen corn
1 T Better Than Bouillon chicken Base (from Costco or Walmart) or 3 bouillon cubes
1 rounded t. Salt and pepper to taste.

Directions:
In a stock pot sprayed with cooking spray brown chicken breast.
Add chopped onion and cook until transparent stirring frequently
Add Chicken broth and water and Bouillon.
Stir and scrape the bottom of the pan to loosen drippings
Add potatoes, carrots, peas and corn.
Salt and pepper to taste
Bring to a boil then reduce heat to simmer.
Simmer for 30 minutes
