1 tablespoon butter
1 cup brown sugar
1 can sliced pineapple rings, drained with 1/3 cup of juice reserved
3 large eggs
1 cup all-purpose flour
¼ teaspoon salt
1 teaspoon baking powder
Maraschino cherries, optional

Directions:
Directions:
1. Preheat oven to 400° F.
2. Melt the butter in a heated cast iron skillet. Arrange the pineapple slices in the bottom of the pan and add cherries as garnish if desired.
3. Sprinkle brown sugar over pineapple and butter.
4. Mix dry ingredients and set aside (flour, salt and baking powder).
5. In a bowl, beat the eggs with a mixer. Add the sugar and beat until light.
6. Add dry ingredients alternately with pineapple juice to sugar and egg mixture.
7. Pour batter into skillet to cover pineapples.
8. Place skillet in oven and bake for about 40 minutes.
9. Cool for about 10 minutes, and then invert cake onto a plate.
10. Serve with whipped cream – the more the better!
