Ingredients:  
1/3 lbs pea pods or broccoli
3 chicken breasts - boned and cut into small pieces
1/2 lb raw mushrooms, thinly sliced
4 green onions, cut in 1" strips/slashed to make small fans.
1 can bamboo shoots, drained and sliced
1 cup chicken broth
1/4 cup soy sauce
2 TBSP cornstarch
1/2 tsp sugar
1/4 cup salad oil
1 pkg cashew nuts

Directions:
Directions:
Mix soy sauce, cornstarch and sugar.
To cook: heat 1 TBSP of oil in wok or skillet.
Add nuts and cook 1 minute.
Remove and set aside.
Add remaining oil to pan.
Add chicken and cook quickly, turning until it turns opaque.
Add peas and mushrooms.
Pour in broth, cover and simmer 2 minutes.
Add bamboo shoots, add soy sauce mixture and cook til thickened, stirring constantly.
Simmer 1 minute, uncovered.
Mix in onions. Sprinkle with nuts just before serving.
Serve over rice.
