3 CUPS DRIED PINTO BEANS, CLEANED
1 TBSP SALT
1/2 DICED ONION, OR 1/4 CUP DRIED ONION
5 OR SIX CLOVES GARLIC, PEELED AND MINCED
1/2 TBSP BLACK PEPPER
1 TBSP GROUND CUMIN
6 CUPS WATER
1/4 PACKAGE OF SALT PORK, OR 1/4 CUP OLIVE OIL
4 OZ SHARP CHEDDAR CHEESE, DICED OR GRATED

RINSE THE BEANS IN COLANDER AND PICK THROUGH FOR ROCKS. PUT BEANS, ONIONS, GARLIC, SPICES AND WATER IN LARGE POT OR DUTCH OVEN. ADD SALT PORK OR OLIVE OIL. BRING TO BOIL AND COVER. COOK ON MEDIUM HEAT FOR AT LEAST 3 HOURS UNTIL BEANS ARE SOFT. MAKE SURE THE WATER IS ALWAYS COVERING THE BEANS, ADD HOT WATER DURING COOKING IF NEEDED. WHEN THE BEANS ARE SOFT, ADJUST FOR SEASONING. IF USING SALT PORK, REMOVE AND DISCARD. YOU CAN SERVE AS IS, OR ADD CHEESE AND SMASH WITH POTATO MASHER.

IF THE BEANS ARE DONE COOKING BUT THERE IS TOO MUCH LIQUID, COOK WITH THE COVER OFF ON HIGH HEAT UNTIL LIQUID IS REDUCED AS DESIRED.
