10 Eggs
1 Med Onion-Diced
1 Cup of Green Pepper
1 Cup of Mushrooms
2 Tomatoes-Diced Small
1/3 C Milk
1/2 LB Cooked Bacon- Or any meat.
1 Cup of Cheese Shredded- Any kind of cheese works
1 Cup of diced Fresh Spinach
Dash of Salt, Pepper, Crushed Red Pepper, Garlic to taste

Directions:

Whisk all ingredients together with a fork.

Spray muffin tins well with non stick cooking spray.

Bake on 375º for 15-20 Minutes for small muffin pans. Larger muffins require longer baking time.

Top with Salsa and eat.

**You can let these cool and freeze them in a zip lock back for a quick on the go meal. Just pop in the microwave for 1-2 minutes if frozen.
