Directions:DRY CHICKEN WITH PAPER TOWEL. MIX ALL SPICES TOGETHER IN A BOWL AND TASTE FOR SALTINESS. ADD SALT IF NECESSARY. POUR OLIVE OIL INTO SPICE MIXTURE AND STIR TO BLEND.
RUB SPICE MIXTURE OVER CHICKEN OR CHICKEN PIECES. BAKE CHICKEN AT 400º, ABOUT 1 HOUR FOR WHOLE CHICKEN, ABOUT 1/2 HOUR FOR PIECES. ALTERNATIVELY, GRILL CHICKEN PIECES ON BBQ OVER LOW HEAT UNTIL DONE. MY FAVORITE WAY TO MAKE IT IS TO GRILL IT OVER LOW HEAT (225º) ON THE TOP RACK OF BBQ WITH FOIL OVER BOTTOM RACK TO CATCH THE FAT DRIPPING FOR ABOUT 1 1/2 HOURS UNTIL SKIN IS CRISP AND MEAT IS NO LONGER PINK. |
