1 Large Onion Chopped
2 Tbs Butter
1 T Flour
1.5 Cups Chicken Broth
1 Cup of Picante Salsa- I use the hot
1 Cup of Uncooked Rice
1 Tbs Garlic Powder
4 Boneless Chicken Breasts
1 Can of Black Beans Drained and rinsed
1 Cup of Cheddar Cheese-Optional
1 Cup of Cilantro- Chopped-Optional
1/2 Cup of Sour Cream-Optional

Directions:
Directions:
In a large Skilled, Saute Onion and Butter until onion is clear.
Add Broth and Salsa, bring to a boil. Stir in Rice and Garlic. Place Raw Chicken over the top. Cover and simmer 10-15 minutes or until Chicken is done.

Stir in Beans and cilantro. Let sit 5 minutes.

Serve and Garnish with Sour Cream and Cheese if desired.
