2 Tsp Olive Oil
1 Large Onion-Chopped
2 Zuccini- chopped
3 Garlic Cloves Minced
2 Tbs Italian Seasoning
1 Tsp Salt
2 Tbs Crushed Red Pepper Flakes
1 Tsp Black Pepper
2 Tbs Basil
4 Cups Fresh Spinach leaves
2 Cups sliced mushrooms
48 Oz of Vegtable or Chicken Broth-Low Sodium
28 Oz Can of Diced Tomaotes with juice

Directions:
Directions:
In a large stock pot Heat Oil and Saute onions and garlic until onions are clear. Usually about 3 minutes. Then add in Zuccini and cook about 3 minutes to soften slightly.
Add in all dry seasonings and mushrooms while zuccini is cooking. Stir well.
Add in tomatoes and broth. Cover and Bring to a boil.

Add in tortellin and cook according to package. When done turn down heat and add in spinach. Let cook 5 minutes. Serve hot and sprinkle with grated Parmesan cheese.
