Small red potatoes, make sure they arent boilers. About a dozen
1 yellow squash
1 Zucchini
salt
pepper
oregano
rosemary
crushed basil
olive oil

Directions:
Directions:
Cut potatoes into 1x2 inch chunks
cut squash into 1 inch slices, then halve (good guide for potato chunks)
place potatoes in a dark glass baking pan or dish (yes, they brown better in a dark dish as opposed to a clear one).
drizzle with olive oil
sprinkle with seasoning
Bake at about 400 for 30 min.
toss with a spatula
continuing baking for 10 min., then add squash..........bake for 20 more minutes.

If you add the squash at the beginning it will be mushy!
