3 hard boiled eggs, grated
1 tsp. prepared mustard
1 tblsp. prepared horseradish
1 to 2 tsps. tarragon vinegar
Salt and pepper to taste
Dash of tobasco sauce
3/4 c. mayonnaise

Directions:

Combine grated eggs with mustard, horseradish, vinegar, salt, pepper and tabasco. Add mayo. and stir to blend. Use as a dressing over fresh spinach leaves.
