1 C sugar
1 3/4 C flour
1/2 tsp cinnamon
1 1/2 tsp. baking powder
1/2 tsp. vanilla
1/2 C walnuts
1/2 C oil (or applesauce)
1 C grated zucchini
3/4 tsp. salt
3/4 tsp. baking soda
2 eggs

1/2 C raisins

Directions:
Directions:
Shred or grate zucchini. Add all ingredients except raisins to food processor and mix till smooth. Add raisins and pulse once or twice to mix.

Grease and flour bread pan. Pour mixture in and bake at 350º for 55 minutes or until toothpick inserted in center comes out clean.
