1 (2 1/2 lb.) pork shoulder roast, cut into 1-inch chunks
1/3 cup flour
1/2 tsp. salt
1/4 tsp. pepper
2 tsp. olive oil
1 small white onion, diced
2 cups diced butternut squash
1 cup apple juice
1 cup low-sodium chicken broth
1 tsp. Italian seasoning
pinch crushed red pepper flakes
cooked rice, for serving (optional)
fresh parsley, for serving (optional

Directions:
Directions:
1. In large bowl, toss chunks of roast, flour, salt and pepper together until pork is well coated.

2. Heat olive oil over medium-high heat in large skillet. Add pork and brown on all sides.

3. Transfer to slow cooker. Add onion, butternut squash, apple juice, chicken broth, Italian seasoning and red pepper flakes

4. Cook on low 8 hours or on high 4 hours.

5. Serve over cooked rice if desired. Sprinkle with parsley.
