2 # boneless skinless chicken breasts, cut into 2 in cubes.
1 T canola oil
1 jar [48 oz] great northern beans, rinsed and drained
1 jar [16 oz] salsa
1 can [14.5 oz] chicken broth
1 tsp ground cumin
2 cups [8 oz] shredded Monterey jack cheese

In a large skillet, brown chicken in oil; drain.
In a 4 or 5 quart. slow cooker, combine the beans, salsa, broth, cumin and chicken.
Cover and cook on low for 4 to 6 hours or until chicken is tender.
Serve with cheese.

Choose the correct size slow cooker for your recipe. A slow cooker should be from half to two-thirds full. While cooking, try not to lift the lid. Every time you lift the lid, steam escapes and you add 15 to 30 minutes of cooking time.
