4 Chicken breasts

4. T butter

1 bag Spinach

2 cups cooked rice

Thai Peanut Sauce (recipe under Sauces)

Cilantro

Directions:

Melt butter in fry pan. Pepper and salt chicken .Cook in butter.
Divide spinach on 2 plates. Top with 1 cup rice, 1. Chicken breast. Cover in heated Thai Peanut Sauce. Garnish with cilantro.
