1/2 lb chicken breast, cubed
1 [14.5 oz] chicken broth
1 [9 oz] cheese tortellini
2 [10.5] cans cream of chicken soup
2 cups half 'n' half
1 [10 oz] pkg. frozen chopped spinach, thawed and drained
1/2 tsp thyme
1/4 tsp black pepper

Directions:
Directions:
Bring 2 cups water to boil.
Cook chicken until no longer pink - 7 to 10 minutes.
Remove chicken from broth and bring to a boil.
Add tortellini, reduce heat and cook until tortellini are cooked throough and firm to bite - about 8 minutes.
Add chicken, cream of chicken soup, half 'n' half, spinach, thyme and black pepper.

One of our motel stops driving out from Alaska one year was in Dillon, Montana. They served a complimentary soup that evening and it was delicious. While she would not give me the recipe, I found this one that satisfied my taste buds.
