Pesto Red Snapper Recipe

1 lemon, juiced
2 tbsp. Red Wine Vinegar
2 tsp. Spicy Mustard (Dijon)
2 tsp. Honey
1 Sprig Chopped Green Onion
3 tbsp. Pesto
2 Fillets of Red Snapper (about 6oz each)

Directions:
Directions:
1. Mix all marinade ingredients into small bowl. (everything but the fish)

2. Place fish into ziploc bag and pour marinade on top. Let sit 30 mins.

3. Heat sautee pan to medium heat.

4. Add fish to sautee pan, allow to cook 3 mins on each side.

5. Reduce heat to low and cook an additional 4 mins on each side. Fish should flake with fork.

6. Remove fish from pan, increase to high heat and boil down marinade into a sauce.

7. Pour reduced sauce over fish on plates. Serve with rice pilaf.
