9" pie crust
1 c. pumpkin flesh firmly packed (1 large pumpkin usually makes 2 c. pumpkin after boiling it, so double recipe if want 2 pies)
2 eggs
2/3 c. milk
2/3 c. sugar
1/4 t. salt
1/4 t. ginger
1/4 t. nutmeg
1 t. cinnamon
1/8 t. crushed cloves

Directions:
Preheat oven to 375.
Prepare pie crust by brushing 1 beaten egg yolk on crust and placing it in oven for 5 minutes.
Boil insides of pumpkin (like you would potatoes) until soft.
Mix together leftover egg yolk and egg white from pie crust along with pumpkin, eggs, milk, sugar, salt, ginger, nutmeg, cinnamon and cloves.
Pour in prepared pie crust and bake at 375 for 50 minutes or until brown on top.
